Pulled pork and caramelised red onion sausage roll recipe

For the pulled pork:

  • 1.5k pork shoulder, skin removed
  • 2 tsp paprika
  • 2 tsp smoked paprika
  • 2 tsp cayenne pepper
  • 4 tsp course black pepper
  • 2 tsp course sea salt
  • 100ml balsamic vinegar
  • 50g Dark brown sugar
  • 40ml water
  • 2 tbls Worcestershire sauce

Slow cook for a minimum of 4 hours or put in oven on a low heat in a heavy bottomed pan with a tight-fitting lid.

For the red onion chutney:

  • 400g red onions halved and thinly sliced
  • Dash of olive oil
  • 100g golden caster sugar
  • 75ml balsamic vinegar
  • 75ml red wine vinegar
  • 1 finely chopped chilli

250g ready-made puff pastry

You also need 1 egg to seal the sausage rolls and to brush before they go in the oven, finally top with a crack of black pepper.

Bake for 15-20 mins at 180 fan, until golden brown.
